A maximum of 20 entries will be acepted on a first-come, first-served basis. All contestants must be at least 18 years old. Each team will receive three wristbands to designate the individuals of their team.
Entry is free, but entry requires 10 pounds of meat, bone-out, for each entry. Contestants can cook pork butt, pork ribs or beef ribs.
Meat will be judged on appearance, color, aroma, tenderness, taste and aftertaste. The judges will be chosen by the Fairfield Park and Recreation contest committee.
Awards will be given to the top three in both categories. The first-place prize is a couple’s six-month membership to the rec center. Second-place prize is an individual six-month membership. Third-place prize is a punch pass.
Check-in and set up time will be between 8-9 a.m. May 10. The meat for the contest must be presented 30 minutes after check-in for inspection. The meat must be inspected prior to being marinated, salted, seasoned or cooked. The meat can be put on the fire as soon as the cook-off committee checks it.
Four individual plates of each entry must be prepared for judging. Ribs must be turned in between 3-3:30 p.m. and butt must be turned in between 3:30-4 p.m. The contest committee will pick up the entries and turn them in to the judging table.
For complete rules and requirements, contact the rec center or visit the park and rec website.
After the judging, a barbecued pork and beef dinner will be served at 5 p.m. for a freewill donation. The dinner will be followed by a pie auction.
