Food preservation, salsa-making workshop set

Learning how to can pickles is part of the Preserve the Taste of Summer food preservation and salsa-making workshop being offered by the Jefferson County ISU Extension office Aug. 26.

The Jefferson County Iowa State University Extension and Outreach is hosting a Food preservation and salsa-making workshop Aug. 26.

The registration deadline is Aug. 18, but organizers are asking people to sign up as soon as possible. A minimum of five participants is required to hold the class.

The workshop, led by Sara Sprouse, a human sciences specialist in nutrition and wellness with ISU Extension, will be 8 a.m. to 5 p.m.

Lesson 1 will cover food safety and canning basics.

Lesson 2 will cover canning acid foods and freezing foods, plus the storage of frozen and refrigerated foods.

Lesson 3 will cover pressure canning low acid foods, preparation and canning of pickled and fermented foods.

Lesson 4 will cover making and preserving fruit spreads and drying foods.

A salsa-making workshop is planned in the afternoon. Participants will practice making and canning a recipe in the kitchen and will process their own jar to take home.

The class fee is $10.

Participants must be 18 years old; those younger than 18 must be accompanied by an adult.
